Caroline’s Cookin’ is Simply Delicious

Caroline Duncan is living out her dreams as what she started out as small BBQ cooking during the weekends has now blossomed into her very own restaurant. Caroline’s Cookin’ is the newest restaurant in town, but with Caroline’s reputation her food is nothing new to people who now love her cooking and have been indulging on her exquisite food.

Her barbeque grilling gave new definition to the phrase “finger-licking good” and as she gained popularity with her barbeque she then expanded her services to a larger menu, adding more dishes and opening on a daily basis on a cozy corner next to Road Kill Bar. But not fully satisfied where she was at, she now has fulfilled her dream of owning a restaurant. With much hard work and dedication Caroline’s Cookin’ is now conveniently located at the Perla Escondida Condominiums located at the end of Coconut Drive.

Ambergris Today got the privilege of being invited for Thanksgiving dinner, but by 7p.m. there was nothing but bones on the two whole turkeys that Caroline had prepared for her Thanksgiving dinner; success nevertheless. But the staff of Ambergris Today had a special treat this Thanksgiving as Caroline prepared her best dishes for us to enjoy; we could not complain that we could not get our turkey dinner because the dishes she prepared for us were excellent.

Standing out amongst the dishes was the juicy Beef Tenderloin. It’s wrapped with bacon and grilled. It’s prepared rare, medium or well done to your taste – definitely one of her best; we recommend this one! The Caribbean Snapper Fillet grilled with onions, tomato, garlic and bell peppers was another great dish that had our taste buds working in overdrive. Accompanying these two dishes was a delicious Chef Salad with tender chicken strips, lettuce, onions, ham, cheese, pineapple and bell peppers. Quite a hearty salad and very tasty.

These two dishes make part of her Island Favorites which also include Rosemary Pork Chops, Grilled Chicken Breast, Jerk Fish Fillet, Stewed Conch, and Lobster Tail. These are served with your choice of Rice & Beans, Cilantro Rice, White Rice, Curry Rice and includes a Green Salad or Coleslaw, Potato Salad or Steamed Veggies.

Accompanying our dishes were three great appetizers – Tasty Rosemary Roasted Potatoes, Conch Fritters that were out of this world (rich in flavor and not too greasy), and Bacon Flambé Shrimp. The Cajun-style shrimp is infused with rum, mixed with bacon and served with garlic toasted baguettes.  Other appetizers include Chicken Fingers, BBQ or Fried Wings, Nachos and Shrimp Ceviche. With our bellies full and our hearts content, dessert was a sweet treat to top off the evening – a slice of Key Lime Pie and Coconut Pie!

French Toast, Omelets and Belizean Breakfast (Eggs Scrambled with bell peppers, Onions, tomatoes with refried beans, Fried Jacks or Johnny Cakes) highlight her breakfast menu while Burgers, Burritos, Tacos and Fish & Chips are included for lunch.

Sounds like Caroline’s menu can’t fit anymore but she still has her fabulous BBQ on Saturdays and Sundays with Lobster, Pork, Fish, Ribs and Italian Sausage, just in case you were wondering about that!
Ambergris Today congratulates Caroline for following her dreams and opening a wonderful and cozy restaurant where she can cater to her clients who have been faithful patrons ever since she started cooking plus others looking for an exquisite culinary experience.
