Love Them Marquesitas!

Delicious goodness on a Crispy wafer stick! Mmm, Mmm, Good! In think that Ambergris Today will be opening a side business of Marquesitas! Yes, really; they are that delicious and the Mexican vendor who came to sell them JUST for the Costa Maya weekend made a killing with them at $5Bze a piece. They were selling faster than you can say Deliciousness! 🙂

Making Marquesitas in San Pedro

They are a delicious Mexican treat and we enjoy them on out trips to Chetumal or Merida, but come Costa Maya, the Marquesitas vendor is on the island selling the good stuff. LOL. For those of you who do not know, a Marquesita is a wafer/crape that is about 12 inches in diameter. It is filled with Dutch Cheese and rolled into a delicious treat that hardens really quick.

The Marquesitas sweet batter is placed on large cast iron and pressed really thin. There is a large propane burner several inches below the bottom of the cast iron. It only takes about 30 seconds for the wafer to cook and grated Dutch Cheese (or Edam Cheese) is placed along the center and rolled up. The wafer quickly hardens to become a crispy treat with the melted cheese down the middle. Other variations of the Marquesitas contain chocolate and fruit, but the most popular one is with the cheese. YUM!
